Over the decades, the business has grown from a small local butcher into a highly respected institution, proudly run today by three generations of the same family.

Pork Season: A Tradition Passed Down Through Generations

As winter arrives, many Italian families begin preparing for one of the most cherished traditions of the year — pork season.

For generations, this season is time for families to gather and make smallgoods such as salami, capocollo and pancetta. In villages throughout Italy, this seasonal ritual was more than just food preparation — it was a celebration of family, culture, hard work, and tradition.

The colder months create the ideal conditions for curing and preserving meats naturally, allowing recipes and techniques to be passed down from one generation to the next. Long days were spent together preparing meats, seasoning recipes by hand, filling casings, and sharing meals along the way.

Here in Australia, that tradition continues strongly. For many families, the King’s Birthday long weekend in June has become the unofficial beginning of pork season. Across Australia, sheds, garages, and family kitchens come alive with the smell of spices, wine, and freshly prepared meats as families continue the tradition brought from Italy.
